Our
origin

In 2021 it was born Cassalla Cavaller with the purpose of vindicate a drink that is as Valencian as it is forgotten. The cassalla, for years marked by a pejorative view, deserved to be looked at again, with respect and pride. Cavaller opted for an elegant and careful reinterpretation, which rescues tradition and elevates it: a refined presentation, a silky flavor with the soul of roots. More than a liqueur, It is a symbol of identity that gives the cassalla back its rightful place.

More than
a symbol

As an identity we choose Tirant lo Blanch, a key work of Valencian literature written by Joanot Martorell in 1490. Our image is inspired by the cover of its first edition in Spanish, printed in 1511, as tribute to our roots and the historical imagination that defines us.

The flavor that awakens our origins

Lo Blanch was born with the intention of revalue a traditional Valencian drink connecting it with the cultural heritage of the territory. More than a liquor, It is a symbol of identity that recovers traditional flavors and links them with collective memory.

In 2025, with the aim of strengthening the connection between the brand and Tirant lo Blanch, we adopted the current name, changing from Cavaller to Lo Blanch. A form of pay tribute to our roots and tell, through each sip, the story that unites us.

Made with respect for tradition and a contemporary look, our products pay homage to the authenticity of a beverage that has been with us for generations. From the first sip, we seek to awaken memories, celebrate our roots, and share a genuine, honest, and profoundly Valencian experience.

CASSALLA LO BLANCH

40% vol. dry anise with hints of cinnamon and vanilla.

Distilled in a copper still, entirely handmade in Alcoy (Valencian Community).

It was awarded with a BRONZE DIPLOMA at the 1st CASSALLA DE REAL COMPETITION, with CASSALLA CAVALLER recognized as one of the three best cassalles in the Valencian Community.

TASTING NOTES

Appearance: Crystal clear at room temperature, but at lower temperatures it becomes cloudy, creating the distinctive “crystals” of cassalla.

Nose: Mild aniseed aroma.

Palate: Smooth sip.

The most
traditional way to take it

The most traditional and authentic way to taste this liquor is to drink it in a shot, very cold, almost frozen, thus enhancing its intensity and freshness.

Another deeply rooted method in popular culture is to serve it in a glass, mixing one part anise with very cold water, adjusting the proportion to each person’s taste. This combination, known as paloma, transforms the liqueur into a smoother, more refreshing drink, perfect for enjoying a pleasant after-dinner conversation or with friends.
